Rosé

Fizzy is made from selected grapes with low alcohol content and high acidity. The grapes are destemmed and fermented in self-emptying tanks at 12ºC where the grape skins are macerated and the must is decanted. After 8 hours, the must is devatted and clarified. Part of the must is filtered and stored in aseptic conditions. Part is inoculated with selected yeast and fermented at 16ºC.

After a month before bottling, the wine and must are blended in isobarometric tanks, where the second fermentation and foaming at 12ºC takes place.
